Toor dal is the backbone of every South Indian thali — the dal in sambar, in rasam, in pappu. Sweet, earthy, holds its shape just enough.

We source unpolished toor — no oil rub, no artificial colour. The cooked dal is duller in colour than the supermarket version, and tastes immeasurably better for it.
